Apache Kitchen: Pecan Pie

Ingredients For the Crust: – 1 ½ cups all-purpose flour – ½ teaspoon salt – ½ cup (1 stick) cold unsalted butter, diced – 4-6 tablespoons ice water

For the Filling: – 1 cup light corn syrup – 1 cup packed brown sugar – 3 large eggs – ½ teaspoon vanilla extract

– ½ teaspoon ground cinnamon (optional) – ¼ teaspoon salt – 1 ½ cups pecan halves – 2 tablespoons unsalted butter, melted

Instructions Step 1: Prepare the Crust 1. In a large bowl, combine the flour and salt. 2. Add the cold butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

– Gradually add the ice water, 1 tablespoon at a time, until the dough comes together. – Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Step 2: Preheat the Oven Preheat your oven to 350°F (175°C).

Step 3: Roll Out the Dough 1. On a floured surface, roll out the dough into a circle about 12 inches in diameter. 2. Transfer it to a 9-inch pie dish, trimming and crimping the edges.

Step 4: Make the Filling 1. In a medium bowl, whisk together the corn syrup, brown sugar, eggs, vanilla extract, cinnamon (if using), and salt until smooth. 2. Stir in the melted butter and pecan halves.

Step 5: Assemble the Pie 1. Pour the filling into the prepared crust. 2. Arrange the pecan halves decoratively on top, if desired.

Step 6: Bake 1. Bake the pie in the preheated oven for 50-60 minutes, or until the filling is set and slightly puffed. 2. Allow the pie to cool completely before serving.
